Kale & Sweet Potato Breakfast Skillet

Sweet Potato, Kale & Egg Breakfast Skillet

As the end of the week approaches, my fresh produce supply starts to dwindle. I am sure most of you can relate to this, am I right?! I am usually desperately trying to use up whatever I have leftover in my fridge from the week before so that nothing goes to waste. This process allows me to get pretty creative with so little ingredients, and gets me trying something new, which is always fun!

In case you haven’t made the connection yet, the recipe I will be sharing today was inspired by my fridge leftovers from the week! It is a hearty, kale & sweet potato breakfast skillet with baked eggs.

Arugula Mandarin Salad with Pomegranates & Pecans

Happy Wellness Wednesday!

Since we’ve been experiencing some Chinook winds coming down from the Rocky Mountains, the weather in Calgary has been on the warmer side. As a result of the warmer temperatures, I’ve been in the mood for some lighter dishes and greenery to offset all the rich foods and sweets I’ve been eating. I decided to put together a very simple winter arugula salad with some seasonal fruits.

Chocolate Almond Bliss Collagen Protein Shake

Collagen has been popping up everywhere these days as one of the most revered superfoods out there. The reason for this is because collagen is a protein that our bodies need in order to create connective tissue for bones, joints, ligaments, teeth, gums, hair and nails. As we age, the amount of collagen found in our bodies declines, which makes it important that we either consume it through our diets, or supplement with it.

Holiday Cheese Board: A Feast of Friends

Holiday Grazing Board

I’ve been really into the idea of holiday cheese boards these days, sharing platters, and have become more and more intrigued by family style sharing  restaurants.

When it comes to dining out, I always feel torn about what to order on the menu because I am incredibly indecisive, and want to eat everything.  I always seem to settle for an entree dish because I fear that ordering small dishes won’t fill my belly up. Irrational thinking, or what?!

Mixed Mushroom Kale Pesto Rainbow Pasta

I’ve been feeling a little under the weather this past week. The hustle & bustle of the holiday season has been getting the best of me, leaving my energy levels feeling depleted..

I hope everyone is doing what they can to manage their stress during this busy time. It is not fun when you feel like you’re running on empty, that’s for sure. It’s important to set aside time for yourself and the things you love, especially when life gets crazy. After all, we can’t give that much to others when we aren’t feeling nourished ourselves. Self reflection and self-love are key!

Breakfast/ Elixers

Creamy Cardamom Mushroom Elixir

Today was one of the first very cold days we’ve experience since winter hit. Winter is definitely here! I was feeling in the mood for something warm and creamy this morning.Β  Something to soothe my cold bones when I woke up… I must say, it’s been awhile since I put together an elixir, but I am feeling all the elixir feels now that winter is upon us!Β  I honestly have so many different superfood and mushroom blends that I have no excuse not to be making elixirs all the time! In light of the arrival of winter and my abundance of herbs and medicinal mushrooms, I concocted this creamy cardamom mushroom elixir.

Greek Style Chicken Orzo & Roasted Tomatoes

It is the beginning of the week and I haven’t had a chance to go grocery shopping, so I’ve been trying to do this thing where I try to use up everything in my fridge so that nothing goes to waste. Enter this Greek Style Chicken dish!

I absolutely hate having to throw food away, especially when it could’ve been eaten throughout the week. There are so many options when it comes to using up your food/preventing it from going bad. What do you do to prevent food waste? I often will try to freeze veggies if I notice they are expiring soon, so that I can use them later in smoothies.
