Happy Wellness Wednesday!
Since we’ve been experiencing some Chinook winds coming down from the Rocky Mountains, the weather in Calgary has been on the warmer side. As a result of the warmer temperatures, I’ve been in the mood for some lighter dishes and greenery to offset all the rich foods and sweets I’ve been eating. I decided to put together a very simple winter arugula salad with some seasonal fruits.
This salad is incredibly easy to prepare. It really only consists of a handful of ingredients, most of which you will most likely already have in your pantry! Mandarins are everywhere right now, and people are going crazy for them. People take their mandarins very seriously this time of year, I tell ya! They are so tasty right now since they are in season. What better way to enjoy them then in a luscious, healthy, green arugula salad?!
The vinaigrette on this arugula salad is very simple, and really only contains a couple of ingredients. Sometimes the best kind of recipes are the ones that don’t require a lot of ingredients! I love the vibrancy of this salad. I truly believe that we eat with our eyes first, then our mouths. Anything green always looks so enticing to eat, in my opinion!
The pomegranates in this arugula salad add a nice burst of sourness, while the mandarins provide more sweetness. They both compliment each other well here. I’ve been loving this arugula salad so much that I’ve already enjoyed it two nights in a row! Let’s be honest, you really can’t go wrong with salad!
Arugula Mandarin Salad with Pomegranates & Pecans
- 5 cups organic arugula
- 1/4 cup toasted pecans, chopped
- 1/4 cup pomegranate arils
- 4-5 mandarin oranges, peeled
- 1/2 cucumber, diced
- 1/4 cup herbed goat cheese
- 3/4 cup organic extra virgin olive oil
- 1/4 cup organic red wine vinegar
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 1 tsp raw honey
- 1. Assemble salad using the first 5 ingredients.2. Put the remaining ingredients in a jar (except the goat cheese) and shake up. Top with crumbled goat cheese. Drizzle on salad & serve!
