Why hello there!
Long time no see! I hope everyone is doing fine and dandy and enjoying lots of hearty, wholesome and nourishing foods and treats this winter season. I know I have been. In fact, my body has been craving all the carbohydrates imaginable. It’s taking everything it can get in the form of carbs to keep my body nice and cozy to survive the cold, winter season. Has it started snowing where you are? It has started snowing here and it is certainly feeling like a winter wonderland outside today..
What better way to celebrate winter then to snuggle up on the couch with some chocolate almond blondie treats?
Am I right?! 😉
This was exactly my train of thought today as I woke up and saw the ground covered in layers of white. I knew that I wouldn’t be leaving the house all day and that I was more than likely going to want to eat treats and be cozy…
These blondies are actually on the healthier side when it comes to desserts/treats. They are gluten-free, so they are great for all you gluten-sensitive folks out there. In addition to being gluten-free, they are also refined sugar free as well, so you don’t have to worry about that crazy white sugar induced insulin spike! Hooray!
On top of all that, they are so easy to whip up and take no time at all. They are rich because of the gooey, melty chocolate, but they are also cakey and delicious. The cacao nibs on top also add a bit of crunch, as well as the chopped almonds. There’s definitely a nice textural element to these. I am almost positive that they will all be eaten by the time the day is through! Sweets do not last long in this household, that’s for sure.
