I love eating oats in the mornings for breakfast, but sometimes you want to change things up. After a couple of days of eating similar types of food, we are bound to get a little bored…So, instead of oatmeal today I am bringing you these Gluten Free Oat Pancakes with Blueberries & Banana.
HOW TO MAKE GLUTEN FREE PANCAKES
These gluten free oat pancakes with blueberries and banana might just be the easiest pancakes I’ve ever made. You literally throw all the ingredients (except the blueberries) into a blender and call it a day. The blueberries are added at the end so that they are still fully intact.
To make this gluten free pancake recipe, you will need: oats, blueberries, banana, baking powder, cinnamon, sea salt, vanilla extract, eggs, honey and some coconut oil. It is that simple. Most of these ingredients you probably already have on hand.
This gluten free pancake recipe will yield around 15 servings, so you will have plenty of leftovers. These are great to reheat throughout the week to get you through those busy mornings. You can easily pop them into the toaster or put them in a frying pan for a couple of minutes to reheat them.
TOPPINGS FOR THESE BLUEBERRY OAT PANCAKES
There are so many different options for pancake toppings. Some of my favourites include: fresh fruit, Greek yogurt, coconut syrup, maple syrup, cinnamon and mint leaves.
For these ones, I topped them with plain Greek yogurt and some coconut syrup. Coconut syrup is a great alternative to maple syrup, and is significantly less sweet. I absolutely love the flavour of it!
OAT PANCAKES AS A POST-WORKOUT MEAL
I have recently started working out again, and am feeling great! I’ve been researching different healthy meal ideas to help support my workouts.
These gluten free oat pancakes make an excellent pre or even post-workout meal. They are full of healthy carbohydrates, as well as protein to keep you feeling satiated. Adding a dollop of plain Greek yogurt can also help increase the protein in this meal.

Gluten Free Blueberry Banana Oat Pancakes
- 2 cup gluten free oats
- 1 1/2 cup unsweetened vanilla almond milk
- 1 large organic ripe banana
- 1/2 tsp ground cinnamon
- 1/4 tsp sea salt
- 1 tsp pure vanilla extract
- 1 tbsp raw honey
- 1 1/2 tsp baking powder
- 3 large organic eggs
- 1 cup blueberries
- extra virgin coconut oil, for cooking
- Greek yogurt, for garnish
- maple syrup
- Add all the ingredients (except for the blueberries) into a blender and blend until the ingredients are well combined.
- Add in the blueberries and stir.
- Preheat a medium skillet on medium high heat and add 1 tbsp of coconut oil. When the skillet is hot, pour 1/4 of the batter onto the skillet and cook for 2-3 minutes per side. Repeat with remaining batter.
- Serve with Greek yogurt and maple syrup on top!
