So, I’m pretty much obsessed with hummus. It is definitely one of my favourite snack foods, up there with spinach & artichoke dip. Last week, I shared a Sun Dried Tomato Hummus on the blog, and this week I want to share a Roasted Red Pepper Hummus!
Notes About The Recipe
This roasted red pepper hummus recipe is very similar to the previous hummus recipe I posted last week. The base of the recipe is the same. Instead of using sun dried tomatoes, we are using roasted red peppers, adding extra virgin olive oil and more chickpeas. You can roast your own red peppers, or you can use jarred roasted red peppers. I used the ones in the jar for this recipe, since I didn’t have any fresh ones on hand.
This roasted red pepper hummus is a little chunkier compared to the sun dried tomato hummus recipe I posted. It is still absolutely delicious, just a slightly different texture. To be honest, I’d be hard pressed to find a hummus I didn’t like. I can easily eat an entire package of hummus in one sitting. That’s how much I love the stuff. I was thinking about experimenting each week with a new flavoured hummus to see how creative I can get with flavour combinations. We’ll see…
Homemade Roasted Red Pepper Hummus
This roasted red pepper hummus recipe is very simple to make. All you need are a few ingredients: chickpeas, tahini, garlic, lemon juice, cumin, aquafaba, salt, olive oil and roasted red pepper. That’s it! It’s as easy as it gets, folks. You toss all in the ingredients into a food processor and viola! You’re left with creamy, easy roasted red pepper hummus. The lemon juice really adds a nice zing to the hummus. The great thing about making your own hummus is that you can add more or less ingredients depending on your tastes. Some people enjoy more garlic, or less in their hummus. Have fun with it!
You can serve this hummus as a snack alongside some veggies, or even as an appetizer at a party. It’s perfect with some sourdough bread (my favourite), crackers, crisps or even as a sandwich spread. It’s much cheaper to make homemade roasted red pepper hummus than to buy it at the grocery store. There really is no excuse to not make it yourself, unless of course you don’t have a food processor. In which case, I sincerely hope you get one because they are LIFE CHANGING!
