Ingredients

  • 5 cups organic arugula
  • 1/4 cup toasted pecans chopped
  • 1/4 cup pomegranate arils
  • 4-5 mandarin oranges peeled
  • 1/2 cucumber diced
  • 1/4 cup herbed goat cheese
  • 3/4 cup organic extra virgin olive oil
  • 1/4 cup organic red wine vinegar
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper
  • 1 tsp raw honey

Instructions

  • 1. Assemble salad using the first 5 ingredients.
    2. Put the remaining ingredients in a jar (except the goat cheese) and shake up. Top with crumbled goat cheese. Drizzle on salad & serve!
