Arugula Mandarin Salad with Pomegranates & Pecans
Healthy & delicious arugula mandarin salad with pomegranates and pecans.

- 5 cups organic arugula
- 1/4 cup toasted pecans chopped
- 1/4 cup pomegranate arils
- 4-5 mandarin oranges peeled
- 1/2 cucumber diced
- 1/4 cup herbed goat cheese
- 3/4 cup organic extra virgin olive oil
- 1/4 cup organic red wine vinegar
- 1/2 tsp sea salt
- 1/8 tsp black pepper
- 1 tsp raw honey
1. Assemble salad using the first 5 ingredients.2. Put the remaining ingredients in a jar (except the goat cheese) and shake up. Top with crumbled goat cheese. Drizzle on salad & serve!
