Rainbow Chard Breakfast Hash with Scrambled Eggs
Rainbow chard sauteed in bacon drippings with mushrooms and bacon bits. Scrambled eggs and fried halloumi.

Preheat a skillet on medium high heat and add the diced bacon bits. Cook for around 5 minutes until the bacon starts to get a little crispy.
Add in the mushrooms. Cook for another 3 minutes, and then add in the rainbow chard. Season with garlic powder, salt & pepper. Cook for about 5 minutes until the chard is soft.
Remove the chard & set aside. In a medium bowl, whisk together the eggs. Add them to the same skillet and cook for about 4 minutes. Season with salt & pepper and fresh dill.
Set the eggs aside. In a small skillet on medium-high heat, add the halloumi slices and fry for about 3 minutes per side. You'll know the halloumi is done with it is crispy on both sides.
To assemble your plate, add the chard to one side of your plate and then the scrambled eggs. Top with fried halloumi and more fresh dill. Enjoy!
